During the week, eating healthy regular meals can sometimes be hard. As I run my business, Kakadu Plum Co., I am often running around from store to store, meeting to meeting, before heading to the school run pick up. It is hard to sometimes find the time to sit down and make myself a healthy lunch. Hard!

To be honest, I am not one to buy ready-made frozen meals. I have often found that the varieties available are high in preservatives, flavours and other unnatural ingredients. Because of this, I often avoid them. But when Weight Watchers sent me some of their new range to try, I have to admit, I was most impressed!

I am not the best in meal planning. In fact, I often try, and try, but fail. It just doesn’t seem to work out for me. But having a few healthy frozen meals stored away and ready to heat up in under ten minutes. I think my week is going to look a whole lot better. Being able to have cannelloni for lunch and not feel guilty… now that is something I am celebrating!

But as these are meals I would probably have only a couple days a week (I do still like my fresh salad), I have come up with a plan that I think I can stick to:

A big green salad:

A bag of mixed greens plus a whole bunch of other fresh vegetables such as capsicum, cucumber, raw zucchini. Make a big green salad and portion it out into three servings. Add a can of tuna plus a dash of olive oil, lunch for three days is sorted.

Healthy Green Smoothie for when you’re on the run:

Simple and fresh with a little Kakadu Plum Powder, and I am sorted. I often whip one of these up and put it in a protein shaker for those ‘on-the-run’ kind of days.

Weight Watchers Pumpkin and Ricotta Cannelloni:

This was delicious. I obviously have to be home to heat this up, but with it being ready in about six and a half minutes it is a healthy, quick and easy meal

Zucchini soup:

I am looking forward to whipping this one up in winter for another simple lunch meal. I have also kept some thermos flasks from when the kids were younger which will be great to use for those days I need to take lunch on the go too.

I am on a journey this year to try and be better prepared. There is nothing worse than not having anything available for lunch, missing lunch completely or eating rubbish food. It really is all about planning!
