apricot balls

This blogging journey has been an incredible ride over the last couple of years. One of the most exciting parts about it is seeing the joy and success it brings to so many individuals. There are many fabulous blogs I follow and read daily. Some are food related, others lifestyle, parenting, and then just the ones that give me a smile every time

I love seeing everyone grow through their writing and little interweb space. And then… sometimes I see bloggers publish books. Mother’s Day last year I received my annual cookbook. But this one was special because it was written by a lady that runs a fabulous food blog. He put two and two together and thought I would enjoy it. I did. I still do.

And today I came across this recipe. I am always looking for new quick and easy lunchbox treats and afternoon snacks for the kids. Always. And now Emma from My Darling Lemon Thyme has her own cookbook that celebrates all her fabulous recipes. Now that is something to smile about. !

Another fabulous blogger, foodie and now, book author.

These little apricot balls are seriously TOO EASY to make!! They are literally a two step recipe in the food processor or thermomix. Total love! You must check out her recipe here and make them yourself.

Congrats on the book Emma. Fabulous job!

Do you know any bloggers/ foodies/ now authors that kind of just inspire you a little too…. ?

Actually I wrote about how I was inspired by Mrs Woog, not for her awesome success, but for her natural, down-to-earth manner. She made a good point that parenting and personal bloggers have a tough gig because we don’t have anything but ourselves to sell. Emma is a foodie blogger that I love, up there with Cooker and A Looker, Mrs Holsby – Emily – visiting as part of #teamIBOT

I am starting to consider myself the healthy treat ball connoisseur. I love them and always keep some in the fridge or freezer. I will have to add these to my collection :-)
