Enjoy the last tastes of summer with kiwi, lime and coconut muffins

I admit, I am one for trying new muffins on a rate that I probably shouldn’t. The reason why I love muffins is that they are so easy to make, and they are the best thing for an afternoon snack, for the kids and myself. And you know that feeling of ‘what do I do with these nearly too-soft-to-eat pieces of fruit’? Make muffins.

Ingredients:
Melted butter, to grease
2 cups self-raising flour
1/2 cup caster sugar
1/2 cup desiccated coconut
1 tbs finely grated lime rind
90g butter, melted
250ml (1 cup) milk
1 egg
5 kiwifruit
Icing sugar, to dust

Method:
Preheat oven to 200°C. Line the muffin pan with muffin wrappers and spray.
Chop 2 kiwi-fruits into dice size pieces. Combine with the flour, sugar, desiccated coconut and lime rind in a large bowl. Make a well in the centre.
In a separate bowl, whisk together the butter, milk and egg in a jug. Add to the flour and kiwi mixture and stir until just combined. Be careful to not over-mix the mixture as this will create denser muffins.
Spoon the mixture among the prepared pans. Top with kiwifruit and sprinkle with coconut.
Bake in oven for 20-25 minutes or until a skewer inserted into the centres comes out clean. Turn out onto a wire rack to cool.
Dust with icing sugar to serve.
