My little man is an eating machine at the moment. Literally! I mean, I feel like I am making & packing food constantly, which never seems to be enough. Come 11:30 in the morning & he has already had a bowl of cereal, a bowl of porridge, fruit, a muesli bar, a sandwich & then maybe a packet of pretzels. I just can’t seem to keep up.

As hard as it is, I try my darndest to make healthy snacks that are nutritious & wholesome. Because he is such a bouncy, energetic young man, I tend to stay away from preservatives, unnatural sugars & foods that seem to maybe only have 20% “real fruit”. But, let’s be honest, making food snacks is a tiresome job sometimes, especially while trying to fit it into everything else within the day {insert note to self to plan the day better}.

But, I am trying. Thanks to some fabulous Mumma friends & groups, my repertoire of wholesome snacks is expanding. The curly apple twisters are the next purchase on the list… I can totally see my kids going mental over curly apples!

Rainbow salad

Who would have thought a bowl of fruit & vegetables can be turned into ‘rainbow salad’? Ha! Yep. A colourful bowl of strawberries, blueberries, tomatoes, cucumber & apples makes a rainbow! Go figure! And they love it! I also tend to make a few extra salads & store them in containers that are just the right size for a snack.

Fried rice

This deceptively simple meal is flavourful and filling. I prefer to use whole grains over white rice, for there are many more nutrients present. Wipe in some chopped vegetables & maybe a teaspoon of honey for some sweetness & you either have a snack or a meal {for those days when activities run into dinner time}.

Carrot & humous

My kids are rather obsessed with humus… I think it is the culture running through our veins. But, it could be any dip. I have seen some fabulous carrot containers with a little section to store the dip that I would love to get my hands on. If anyone knows where to find this, please let me know.

Homemade muesli bars

My kids love muesli bars. But, the store bought ones have so much sugar & often filled with a whole bunch of other ingredients. This recipe is a go-to for me. Simple & delicious.

Chop Chop salad

Another salad that my kids are devouring {believe me, it is not every day that they are sale lovers}. It is now officially called chop chop salad – chopped up cucumber, tomato, red onion, sweet corn, salt & pepper, a dash of oil & fresh lemon juice – chop chop salad.

If you have read this blog for a while, you know that I love discovering recipes and sharing recipes. Even a healthy ‘winter slaw’ can be a winner with kids. It is super easy to prepare some tasty snacks for those ‘on-the-go’ moments.
