I have been stocking up on the last few summer stone fruits before they go out of season. In all honesty, I think they are just about done with their season. And because I stocked up, I am often left with very rip fruit and an uncertainty of what to do with them.

A couple of weeks ago we had one of our annual family festivities. Dessert was left to me. And with a little inspiration from Nikki from Styling You, I decided to do roasted stone fruit. She posted a photo of her amazing recipe with simple, and I mean SIMPLE, instructions. I knew this would be a winner. And then with a little more research and food blog browsing, the addition of fresh strawberry sauce made my mouth salivate in a second.

It was a winner! Not one person disapproved.

INGREDIENTS

12 stone fruits – peaches, plums, or nectarines, or a combination.
1/2 cup orange juice
3 cardamon pods
4 tablespoons brown sugar
1 tablespoon vanilla extract
A dash of fresh lime juice

For the sauce: 

2 cups strawberries, hulled and halved
3 tablespoons sugar
1 teaspoon fresh lemon juice

METHOD:

Preheat oven to 180 degrees.
De-pip the stone fruit and cut into quarters.
Get an oven proof dish and place the fruit in the dish so it is packed tight.
Add the sugar, vanilla, orange and lime juice and cardamon seeds and mix well. Sprinkle an extra little sugar over the fruit.
Cook for about 30 minutes. I cooked my fruits for longer because I had a large quantity and I wanted them really tender.
Make strawberry sauce: Purée strawberries with sugar and lemon juice in a food processor, then force purée through a fine mesh sieve into a bowl. Chill until ready to use.

A little tip: This tastes even better a day after you have made it. Letting it sit, cooked in its juices over night or for 24 hours makes it even more tasty. Of course, if you don’t have time, it is still yummy when just out of the oven.
