The best pear muffins ever

My mother-in-law makes the best muffins ever. It has been my mission to try and get my muffins just like hers. And so, with a little supervision from her (yes, she watched my every move), I perfected them.

Ingredients

2 cups white self-raising flour
1 teaspoon cinnamon
1/2 cup grapeseed oil
1/2 cup apple juice or pear juice concentrate
1 ripe pear, grated
3/4 cup apple juice
2 whole eggs
1 egg white

Method

 Preheat the oven to 180 degrees celcius. Prepare a 12 pan muffin tray by lining it with muffin tins
♥ Sift the flour and spice into a medium- sized bowl. Add the pear.
♥ In another bowl, combine the grapeseed oil, juice concentrate, juice and eggs and egg white. Beat well in an electric mixer or hand held mixer.
 Add the egg mixture to the flour and fruit and stir lightly.
♥ Spoon into the muffin tray and bake for 20-25 minutes or until golden brown.
♥ Remove the muffins immediately and allow to cool on a wire rack.

Note: To make the muffins super fluffy try not to over stir the flour. You don’t have to use an electric mixer, but it adds to the fluffyness.

    I love a good pear muffin. My son has horrible tummy problems and consumes almost a pear a day. I’ll have to give this recipe a go, thanks.
