Vanilla and Peach Butter Cake

Who doesn’t love a warm slice of cake fresh from the oven, more to the point who can resist?  It really is one of the simple pleasures of life.  Recently when I had this craving, I went looking for a recipe that was quick and easy to make, as let’s face it, who wants to wait for cake!  The addition of vanilla and peaches to Donna Hay’s Melt and Mix Butter Cake recipe is simply divine.  This is a deliciously soft and buttery cake, and the peach slices scattered throughout add a yummy surprise to each bite.  You don’t need to add any fancy icings to this cake, just a light sprinkle of icing sugar is all you need.  If you can resist, it tastes great when cooled, but I love to eat it warm with a scoop of ice cream.  Enjoy!

You will need :

1 & 3/4 cups plain flour

1 & 3/4 teaspoons baking powder

1 cup caster sugar

125g melted butter

2 eggs

1/4 cup milk

1 teaspoon vanilla extract

250g tinned peaches

Icing Sugar for decoration

Method :

Firstly you need to preheat your oven to 180 degrees and line a 20cm round cake tin with baking paper.

Drain the peaches in a colander and set aside. It’s important to remove as much of the juice as you can.

Combine ALL of the other ingredients into the bowl of an electric mixer, and beat until all combined (it’s really that easy!)

Add the drained peaches and mix on the lowest speed for approx 10 – 20 seconds to combine peaches throughout the mixture.

Spoon into cake tin and baked for 40 minutes or until cooked through when tested with a skewer.

Allow the cake to cool in the tin for 10 minutes, before turning onto a wire cooling rack.

To serve, sift a light layer of icing sugar over cake and slice.
