My two boys are quite fussy when it comes to eating vegetables especially green ones. I created these muffins to add some vegies into their diet. Even though the muffins are super healthy, they are quite the hit with all ages especially at morning or afternoon tea time. I can be sure that every last crumb will be devoured so my boys are guaranteed to get some vitamins and minerals into them. These are also suitable for freezing. Enjoy!

Ingredients

1 1/2 cups of wholemeal self-raising flour
1/2 cup of ‘quick’ oats
3 tablespoons of melted honey (zap in microwave for a few seconds)
1 teaspoon of cinnamon
2 large eggs beaten lightly with a fork
1/2 cup vegetable oil
1 teaspoon vanilla essence
1 cup of grated zucchini
1 cup of grated carrot
2 tablespoons of chia seeds (optional)

Method

♥ Preheat oven to 180oC

♥ Grease or line one large 12-hole muffin tin or two small 9-hole muffin tins

♥ Put all the ingredients in a bowl and lightly mix together with a spoon until the ingredients are just combined

♥ Spoon into muffin tins

♥ Bake for 20-25 muffins until lightly brown on top
