weekend cooking : quick & easy sausage rolls

easy sausage rolls

At the moment, all she wants to eat is sausage rolls! When I first tried this little recipe, all she seemed to eat was the ‘roll’ and not the sausage… cheeky bugger!  From the time that I thought I  had a fabulous eater to a now fussy eater changed quite quickly. So these days, my kid meals are simple, nutritious and something not too fancy.

Welcome to sausage rolls! Well actually… they are more like ‘dogs in donnas‘. I have no idea where this name came from, but I love it! And so does the Little Miss. And the days of just eating the ‘roll’ has evolved to eating the WHOLE sausage AND roll. Yes, winner!

What I have found to make meal time more exciting and more successful is getting her involved. In some shape or form she likes to help prepare her food. And this is the perfect recipe to do so.

Now, some people would do this differently, but I am the quick and easy method. From my local butcher I can get ‘kofta rolls’, which is basically lamb mince rolled into a small sausage. They don’t have the casing around them, so they are perfect for this recipe. However, I have resorted to using ordinary sausages (with their casing) for this too. I actually saw Jamie Oliver use a similar method one day, so, if it is good enough for him then it is good enough for me!

Ingredients:

Kofta lamb rolls OR sausages
1 x sheet of pre-rolled puff pastry
1 x egg

Method:

♥Cut the pastry into eighth’s.
♥Place your sausage in the middle of the pastry and roll on an angle.
♥Brush with an egg wash.

SIMPLE!

The best trick is to get the little one’s to ‘paint’ the rolls with the egg. They may be a little more egg than otherwise, but they love it and makes the end result a whole lot more exciting !

What’s on the menu for you this weekend?
