best fluffy pancake recipe ever

For those of you who follow me on Instagram, you would have seen my photo of the gorgeous yummy looking pancakes I made. The truth is, I thought I was making the best pancakes ever for months now. They were always a winner, eaten in seconds and loved by all. Until I found this recipe. Let’s just say, my ‘best ever pancakes’ went out the window in a second for these totally even better pancakes.

I found this fabulous recipe from the fabulous Veggie Mama, and I learnt a few little secrets. The trick to the best fluffy pancakes is Self Raising Flour, Baking Powder AND a little rest time. You can read her full recipe and explanation here. She used quite a fair bit of sugar, I used about one tablespoon. She also added a pinch of salt, which I didn’t. As always, I like to experiment and change recipes around a little to meet my needs and the needs of my munchkins.

Ingredients
1 banana, mashed
1 cup self-raising flour
1/2 tsp baking powder
1 egg
3/4 cup milk
a couple of drops of vanilla extract
a dollop of vanilla yogurt

Method
1. Mix everything into a bowl. Lumps are ok. At this point you can leave it to start activating the raising agents so it gets bubbly and produces a lighter result – about half an hour or so, or if you don’t think ahead, like me, just use it straight away.
2. Melt a little butter in a pan over medium-low heat. Drop a tablespoonful (for baby sized pikelets) in the pan without touching. For bigger sizes, use two tablespoons and spread it out a bit.

3. After two minutes or so, bubbles should appear and begin to burst, and the sides of the pikelet should be fairly sturdy. The underside should be starting to brown. Flip carefully, as the top will still be quite gooey and you can quite possibly fling it everywhere, and cook the other side for a minute or so, until underside is golden.

So there you have it, the best fluffy pancakes ever, take two!

    Banana’s instead of eggs, haven’t see n that before. I must admit, being the non-cook that I am I generally tend to make pancakes from those ready-made, just-add-water packs, otherwise its just basic flour, water, eggs but I might have to give this a go as pancakes is one of the few things I don’t mind cooking!

    I made pancakes today but my kids actually like them more like crepes, so big and thin and then rolled up…which is pretty much how I love them!
