These choc chip oat cookies are just yummy yummy yummy. Great for lunch box treats and an afternoon snack. Baking must be easy in my household. And preferably kid friendly too! These cookies tick all the boxes.
An extra little note on these cookies… they are dairy free.
Ingredients:
. 150g Nuttlex, softened
. 1/4 cup brown sugar
. 2 tsp vanilla extract
. 1 egg
. 1 cup self-raising flour
. 2 cups rolled oats
. 1/4 choc chips (dairy free)
Method:
Preheat oven to 180 C. Line 2 baking trays with paper.
Using a mixer cream the butter and sugar together. Add the vanilla extract and egg. Mix well. You could do this without a mixer if you want too.
In a separate bowl, combine the flour, oats and chocolate chips.
Mix the butter and sugar mixture until well combined.
With your hands (love getting the hands dirty and so do the kids) scoop small amounts of the mixture into a ball and place on the tray. Push down slightly. Sorry… i really have no other technical way to describe this
Bake for 20 minutes or until pale golden. Leave to cool for 5 minutes before transferring them to a wire rack.
This should make about 20 small cookies.
