There is nothing more rewarding then going to the effort of baking something, and then it is eaten… in a flash!
I love baking! I love it even more when it is quick and simple and few ingredients. So of course, these Cocoa Weetbix Slices are just a winner. Of course, the recipe was put together by Planning With Kids. Nicole has some really wonderful recipes and if you have not seen her collection, then you seriously have to go NOW and check them out.
And because she is a mum with five kids, her recipes are designed to be quick and easy!
I modified this recipe a little though. She put icing on top, and I didn’t. I also added vanilla essence. I also reduced the sugar content a little, added an extra Weetbix and used spelt flour instead of wholemeal..
Ingredients
5 x weetbix
1 cup Spelt flour
1/2 cup desiccated coconut
1/4 cup brown sugar
1 tablespoon cocoa
75 g melted butter
1/4 cup water
1 teaspoon vanilla essence
Method
♥ preheat oven to 180 degree celsius
♥ crash weet-bix in your hands in a medium sized bowl.
♥ pour melted butter into the bowl and stir well.
♥ add the flour, coconut, sugar, vanilla and water. Mix well with a spoon. Or if you have the kids involved, hands are good too.
♥ line a slice tray with baking paper and evenly and firmly place the mixture into the tray.
♥ bake for about 15 minutes or until the mixture turns a golden colour.
