Sometimes we all need a gorgeous apple muffin recipe. In all honesty, my muffins can be hit and miss. Sometimes they are AMMAZING. And sometimes they are a total failure. But when my mother-in-law shared her secret recipe that never fails, I knew things in my muffin baking world would only go up hill.
And they have. And now I am sharing it with you.
You will need:
1 1/2 cups white self-raising flour
1/2 cup white plain flour
1 teaspoon cinnamon
1 x 425g can unsweetened apply slices
1/2 cup grape seed oil
1/3 cup apple juice concentrate
2 teaspoons vanilla essence
3/4 cup low fat milk
2 egg whites
1 whole egg
♥Preheat the oven to 180 degrees and lightly grease the muffin tray
♥Sift the flours and cinnamon into a medium-sized bowl.
♥In another bowl, break up the apple slices with a fork, to resemble smaller apple pieces. Add the apples to the flour mixture.
♥In another bowl, combine the grape seed oil, apple juice concentrate, vanilla essence, milk and eggs. Beat well.
♥Add the egg mixture to the flour and apple mixture and stir lightly.
♥Spoon into the muffin tray and bake for 20-25 minutes or until golden brown. ‘
remove the muffins immediately from the tray and allow to cool, covered, on a wire rack.
Note: The trick to these muffins being very light and fluffy is to NOT over work the flour and egg mixture. Just stir enough that it is all combined. If you see a little bit of flour, this is actually what you want.
