Easy energy balls {thermomix}

These must be the easiest protein balls ever! I like to whip these up about once a week as they provide the best mid morning or afternoon snack. Unfortunately I can’t put them into the lunch boxes because they have a small amount of nuts, but let me tell you, they are a winner when the kids arrive home.

And Dadda usually gets one {or two} in his lunchbox too.

 

Ingredients: 

2 cups muesli mix {I usually buy mine from a whole food store that contains a load of nuts, seeds and oats. But you could use whatever you have in the pantry}

2 tablespoons cocoa

1/4 cup Rice Malt Syrup {or honey}

A drop of water

Shredded coconut to coat at the end

Directions: 

Simply put all ingredients into the thermomix and blend on Speed 5 for 20 seconds. Check to see if the mixture is moist. Add a drop of water to make the mixture softer if needed. The amount you use really depends on how moist or dry you want the balls.

Roll into balls and coat with coconut
