I have been pushing myself lately to make and bake more healthy snacks for the kids and I. It is those times when you are ravishingly hungry and, of course, go for the salty and unhealthy options in the pantry.
I am all for healthy options that are filled with goodness and nutrition. I also want these snacks to be easy and quick to make.
I am so fortunate to now be in the health and wellness space promoting and advocating for Australian native superfoods. It is so incredibly humbling! With Kakadu Plum Powder having such an incredible high source of vitamin C, up to 100 times vitamin C to oranges, it encourages me to add it to just about anything.
This recipe is even more super easy because I used a ‘pre-mix’ protein ball mix. There are so many different options now available in either the supermarket or health food stores. I like to go with a low sugar option.
Protein Balls with Kakadu Plum Powder
Ingredients
1 x protein ball mix
1/4 cup honey or rice malt syrup
1/4 cup honey
2 teaspoons Kakadu Plum Powder
2 teaspoons Chia seeds
1 cup boiling water
Method
♥ Mix the protein ball mix with the chia seeds
♥ Heat the coconut oil and rice malt syrup in the microwave until hot and bubbling
♥ Pour over mixture and stir
♥ Add boiling water until the right consistency is created.
♥ Stir through Kakadu Plum Powder
♥ Roll into balls and coat in shredded coconut if you wish.
Refrigerate and enjoy
