These school holidays are all about fun fun fun. Family time, fun time, those little things that you ordinarily would not do.

So why not get the hands dirty and get a little creative with some fun in the kitchen.

Cooking is a great activity for kids. Not only are they helping you out (well kind of), but they are learning new ways to create, use their imagination, and get incredible positive rewards at the end.

In our kitchen, muffins are magic! Muffins are well loved. Not just by the little one if you know what I mean…

Somehow I stumbled across this fabulous muffin recipe provided by Planning With Kids. As I am trying this new “diet/ reduction of preservatives/ reduction of sugar / food modification (what do you call it for a 20 month old… really), I wanted a recipe that contained raspberries and other summer fruits.

They have so much flavour and goodness.

So I altered it a little by:

– taking out the white chocolate

– taking out the sugar

– adding a banana

So here is MY fabulous recipe. Let’s call these

Raspberry and Banana Magic Muffins

Ingredients:

  • 2 cups self raising flour
  • ¾ cup milk
  • ½ cup canola oil
  • 1 tsp vanilla essence
  • 2 eggs
  • 1 cup frozen raspberries
  • 1 mashed banana

Instructions:

Preheat oven to 180 degrees.

Place patty pans in muffin trays.

Pour flour and sugar into a medium sized bowl. Mix and make a well in the middle. In a separate bowl/jug mix vanilla, eggs, milk and oil.

Pour the liquid ingredients into well and mix with a wooden spoon. Muffins are best when made quickly and not over mixed.

Roughly chop and add the raspberries.

Mix ingredients lightly through with a wooden spoon.

Spoon into patty pans.

Cooking time depends on the size and oven, but 12 -15 minutes is about average for the standard patty pan size.

This made 18 mini muffins. It would make about 12 larger muffins. But please don’t hold me to the quantity.

    Yum! I love raspberries. I have to admit that raspberry and white choc is my favourite muffin flavour. But, now that I’m trying to quit sugar, there won’t be any white choc or sugar in mine either!

      tell me about it laney! I think the white chocolate would be yummo but I am trying to quit the sugar for my little one! Maybe i could make them for a treat for me :)

    Any recipe that has the word “magic” in it will entrance my children… and any recipe that has this much fruit in it entrances me! They do look amazing. I think we’ll give it a go!

    I’m always looking for new ways to get more fruit into the kids, and these sound great! I think we even have some frozen raspberries in the freezer too. Might have to give them a go tomorrow!

    That’s for sharing. I tend to halve sugar in most recipes or replace it if I can so this sounds like a good recipe to try. Was it a bit tart with the raspberries though?
