quickest and easiest burgers

And the kids will love them!

It was one of those moments last night where  thought what can I prepare in 10 minutes that is good, healthy and nutritious and that Little E will love…..

Ingredients:

1/2kg of beef mince

1 onion, diced

1/2 zucchini, grated

1 carrot, grated

1 can sweet corn kernels

1 egg

1/2 cup breadcrumbs (or equivalent for those gluten free lovers)

1 tbs mixed dried herbs

method

1. Dice onion finely

2. Grate zucchini and carrot

3. Place all ingredients into a large bowl, including mince, egg, breadcrumbs and herbs and mix well.

4. Wet hands and form patties. Place on a separate bowl.

5. Fry with a dash of oil

THAT IS IT!!! Too easy!!!

And the kids can even get involved if they wish, minus the chopping of onions!

These are fabulous to freeze. Just pop a few uncooked patties into zip lock bags and on those nights where you just don’t want to cook, take them out and put them straight on the pan.

AND… they are also fabulous for school lunch boxes! Need some lunch box ideas?? These will be a winner as they are also yummy yummy eaten cold! Or maybe in a sandwich.
