Before I became a Mumma I was totally scared of anything to do with baking, let alone cookie making. I had this fabulous Kitchen Aid in pretty red, sitting there, literally collecting dust, never used. And then motherhood hit. And BAM! Baking happened.

For the munchkin’s combined birthday party, one of the favourite food items were my cookies with gorgeous royal icing on top. A hit! And I realised the other day that I still had cookie dough in the freezer. Yes, cookie dough freezers!

Put in the fridge, a moment to spare, and today I rolled out the dough to make fabulous cookies.

I have to be honest, I have had a few inspirations along my cookie journey. The Decorated Cookie is just one of the fabulous blogs I have discovered that have AAAMMMMAAAZZZZIIIINNNNGGGG cookie recipes. Well actually, cookie decorating tips. I constantly flick through the pages and am inspired to just make something fabulous. In the meantime, I am sticking with my simple vanilla cookie dough with a few smarties on top.

And the kids love them all the same!

Sugar Cookies:

220 grams unsalted butter, softened
1/2 cup confectioner’s sugar
1 egg
1 tsp vanilla extract
2 1/2 cups flour
1/2 tsp salt

♥ Cream butter and sugar. Add egg and blend well.

Add extract and blend. Mix flour and salt and gradually add.

Cover dough with plastic wrap or in a Ziploc bag and chill dough for about 2 hours. Don’t skip this. You must chill the dough.

Working with about 1/3 of the batch at a time, briefly knead the chilled dough and roll out the dough. Cut out shapes and place a Smartie (or many) on top of the dough for car wheels and gingerbread buttons.

Bake cookies on parchment paper-lined baking trays at 180 degrees for 12-14 minutes. Thicker cookies may need up to 20 minutes. Just watch for edges that are nicely golden.  

Remember, you can freeze dough too after mixing.

    Thanks for the recipe. I was given some awesome cookie cutters a while back, but put baking cookies in the too hard basket. I rarely baked either before becoming a mum. As for a kitchen aid, I don’t even know what the hell that is ;) I might give these cookies a go though.
