Melbourne winter calls for soup. Lots of soup. I am so loving soup at the moment, I literally can’t get enough. More often then not, when it comes to soup I am looking for something to whip up really quickly in the thermomix. This one is a winner and is jam packed with flavour. I found the recipe here, so if you don’t have a thermomix, don’t worry!
Ingredients:
1 brown onion
10 cloved garlic,
4 large zucchini, roughly chopped
3 cups chickon stock or water
2 tablespoon vegetable paste
1cm ginger
Salt and pepper
Method:
♥ Put garlic and onion into thermomix and grind, Speed 4 for 5 seconds. Scrape down sides and pour in a dash of oil. Saute for 3 minutes, Speed 1, Varoma Temp.
♥ Put in the zucchini, vege paste, chicken stock, ginger and salt and pepper. Cook for 25 minutes, Speed soft, 100 Degrees.
♥ Once cooked, blend, Speed 9 for 20 seconds.
