Crispy Chocolate Oat and Walnut Biscuits

Sunday morning, nothing planned… how about baking. And baking we did.

As my Miss has a very big sweet tooth, these days I much prefer to make and bake things. Apart from an activity that she just LOVES, I know what goes in them. This gives me greater confidence that she is not getting any extra nasties. These biscuits were super easy. Wiped up in no time. And super moist and yummy. I had to literally hide them from her as she decided to get her stool, climb up on the kitchen bench and help herself while they were cooling. Such a cheeky devil she is!

Ingredients

1 cup butter, room temperature
1 cup brown sugar
2 large eggs
1 cup walnuts
1/4 cup cocoa powder
1 tsp baking soda
1/2 tsp baking powder
2 tsp vanilla extract
1 cup flour
3 cups rolled oats
1/2 cup shredded coconut

Method

♥ Preheat the oven to 180C. Lightly grease or line 3-4 cookie sheets with parchment paper.
♥ Whiz the walnuts in a food processor in short bursts till finely chopped. Add the cocoa, salt, baking soda and baking powder, & process again till well mixed.
♥ Using an electric mixer, beat  the butter and sugar in a large bowl until smooth and creamy.
♥ Add the sugar, eggs and vanilla extract and beat until well blended and fluffy.
♥ Slowly add the flour and continue to beat well.
♥ Fold in the 3 cups of oats with a spatula, combining well.
♥ Place heaped tablespoons on the greased cookie sheets, leaving an inch of space around for spreading. Bake for around 20 minutes or until brown.
♥ Cool on racks and keep them clear from hungry eyes.

Extra note: Feel free to add chocolate chips, admit the cocoa {just add more flour} or add a few extra nuts, or admit them too. Just make sure you have fun too. Licking the spoon is the best bit at the end.
