Chocolate chip cookies are always a winner. They are one of those go to recipes for when you don’t have a recipe because everyone loves chocolate chip cookies! And because my baking hat is on lately and I am into baking the freshest, healthiest (although these are not up there on the healthy scale) and yummiest recipes, I had to try this recipe.
Now, this is not my original recipe. I have fallen in love with an American foodie blogger, Purple Foodie. Just amazing! I totally recommend you you check it out if you have not heard of it.
And this is her wonderful recipe. I tweaked it a little… as I never follow a recipe down pat, right down to the little measurement I think it is the creative side in me that wants to just experiment a little on my own too. I am going to give you her exact recipe and leave it to you to tweak yourself too…
Ingredients
1 Cup flour
1/2 teaspoon salt (I didn’t add this)
1/2 teaspoon baking soda
100g soft butter
1/2 cup sugar
1/3 cup brown sugar
1 teaspoon vanilla extract
1 egg
1 cup chocolate chips
Method
♥ Sift the flour, baking soda and salt together. Set aside.
♥ Beat the butter for about a minute. Slowly add the sugars and beat well until light and creamy. Add the vanilla and continue to beat for about another minute.
♥ Add in the egg.
♥ Reducing the mixer to a low speed (I used level 2), slowly add the flour, a little at a time. Do this until all he flour is evenly combined.
♥ Fold in the chocolate chips and then refrigerate the dough for about 30 minutes.
♥ Remove the dough from the fridge and use a spoon to place a tablespoon full dough on a lined cookie tray. Leave a good space between each spoon full as they will expand.
♥ Bake for about 15 minutes or until golden brown.
♥ Cool on a cooking rack.
