We had our first morning of entertaining the other week… entertaining where there is more then one person popping over at one time. Afternoon tea requires a little something to eat right? Especially with children involved.

Baking for me has to be easy! That means, all in one bowl or soothing that does not require too much detail and attention. This is a winner and can I say… the one person who has been doing the ‘no sugar diet’ for 6 weeks and has had NO sugar… let’s just say he had a sugar overload that afternoon!

So this is my easy banana cake: And I did it dairy free too! If you want to use dairy, just substitute for butter and milk.

Prep time is about 15 minutes

Ingredients:

  • 125g nutalex
  • 3/4 cup sugar
  • 1 tsp vanilla essence
  • 1 egg
  • 2 ripe bananas, mashed
  • 1 1/2 cup self raising flour
  • 1/4 cup soy milk
  • 1/2 cup desiccated coconut

Method:

Melt the butter in the microwave for about 10 seconds

Add to the sugar and vanilla essence

Sift in flour and stir lightly. Add egg and add milk. Stir well.

Add mashed banana and coconut and stir until just blended.

Pour mixture into lined cake tin

Bake at approximately 180 degrees for about 40 minutes

Extra note: If you feel up to it you can melt butter, sugar and vanilla essence over a medium sized saucepan. I honestly was not bothered and felt it was not necessary.

So there you have it! And silly me forgot to take a photo of the final product so was left to take a photo of the half eaten, not much left, sliced cake.

      or freeze the bananas Julie and then I use them for pancakes or cooking when needed. Just pop them in the microwave for a few seconds to get the chill off and then cut the skin off x
