easy veal slow cooker recipe

There is nothing I like more then a yummy slow cooked, hearty warm stew in winter. The one where the meat just falls off the bone, full of flavour and is just SOOOOO easy to prepare. This one is a real winner

Ingredients:

2 veal shanks
1/2 kilo veal goulash
sea salt and ground pepper
olive oil
6 garlic gloves
a small bunch of fresh time
a couple sprigs of fresh rosemary
1 leek sliced
1 onion
1 fresh bay leaf (or dried)
1 can chick peas
4 cups chicken or vegetable stock

Method

Preheat oven to 180 degrees. Season veal with a good dose of salt and pepper and a good dash of olive oil.

Put the leeks, onions and garlic cloves onto your casserole dish (I use one of these which is great for on the stove and then just wack it into the oven). With a little olive oil cook stirring occasionally on medium heat for about 15 minutes or until the leeks and onions are softened.

Add the meat and stir occasionally. You want to brown the meat slightly and get the flavours into the meat. Add your fresh herbs, chick peas and stock. Stir well. Place in the oven for about 3-4 hours.

When the meat is tender soft and falls off the bone, serve with quinoa, rice or cous cous. Add fresh parsley to garnish.

You could also do this recipe with a slow cooker where you simply just put all the ingredients into the pot and cook. Yummo! A great winter warmer for winter.

Note: Since posting this I visited my butcher and realised that the veal shanks I say I used are in actual fact Lamb. Just a minor technical error!
