weekend cooking : 5 meal ideas for one

This household has been hosting meals for one. Who’s invited? Me. So what has been on my menu? In all honesty, I am a salad queen. I just love my salads. So this week I have gone to salad planet for one, with a little tofu on the side.

You may have read about this salad I put together not too long ago. Cabbage is my latest ‘must have’! And then there is pomegranate. Yes, cabbage and pomegranate. And a few fresh peas when I have been able to duck out to the fruit grocer.

And then there is tofu, sweet potato and roast pumpkin. And roast garlic! I kind of now feel a little boring! But sometimes it is the simple meals that appeal to me.

So… my meal tips and ideas for one:

1. An omelette with vegetables

2. Salad with cabbage and pomegranate

3. Easy stir fry 

4. A pre-packed soup from the cold section in the supermarket (dare I confess)

5. Next time you make a big batch of bolognese sauce or that veal cooked in the slow cooker, portion out a serving for one… just for those odd occasions.

    Years of handing my babies over to their father for shared parenting means more often then not, I’ve been left to my own devices… and cooking.

    Usually I’m more likely to make up something in bulk (ie for two or more) and put it in the fridge for the following day or so.

    More recently, I was in no condition to even want to eat whilst left alone so tonight is going to be quite a challenge of a gourmet kind. ;)

      I have this thing that I can never really cook just for one… Even when I do there is always left overs.

      Th freezer is my best friend sometimes x

    I’m with you on the omelette with veggies! I also love making a tuna salad – one 175gm can and loads of spinach, sprinkled with shallots, mung beans and a squeeze of lemon…noms!

    Cooking for one can be so dull. I love a good omelette, and the variations are endless. Although, I do think my faves are cheese and fresh herbs from the garden, or ham and cheese served with some caramelised onion – yum :)

    Left overs. Or anything on toast is the answer for me. Or soup – I love soup but the rest of my family are not huge fans. I could eat soup every night.
