Little E loves pancakes. But not only does she loves eating them, she gets just as much thrill making them. I measure out the flour into the cup. She pours it into the bowl. I measure out the milk. She pours it into the bowl.
She has a spoon, I have the whisk. She sits on the bench and I stand behind the bench. She watches me flip them. And then I watch her eat the best pancakes ever.
This recipe is super easy. Only a couple of ingredients. And they make the best pancakes ever!
– 1 egg
– 1 cup milk
– 1 cup self-raising flour
– 1 teaspoon cinnamon
– 3 tablespoons desiccated coconut
– 1 ripe banana, mashed
Crack egg into bowl and beat.
Whisk in milk, self-raising flour, cinnamon and coconut.
Fold in mashed banana.
Add butter to a fry pan and spoon a small amount of the mixture into a pan. Cook over a medium heat for about 2-3 minutes.
When bubbles appear, flip and cook for a further 2-3 minutes or until lightly brown.
Serve with a little maple syrup, fresh strawberries, kiwi fruit, fresh banana or whatever your heart desires
